Slow drying a certified 9-hour drying time for short pasta and a certified 18-hour drying time for long pasta, at low temperatures is the hallmark of the Liguori Method. This is the most delicate phase of the entire process and preserves the organoleptic properties of the prized, 100% Italian raw materials, guaranteeing pasta with a unique flavor and color, and rigorously al dente. Slow drying at low temperatures ensures a firm pasta, preserving the protein structure and preventing denaturation.

The whole wheat semolina used for our pasta is obtained through a milling process called "whole-milling," which preserves all the anatomical components of the durum wheat grain, including the germ with precious vitamin E. This, along with selenium, found in the bran, enriches the pasta with antioxidants and is a natural source of minerals and vitamins (magnesium, iron, zinc, and vitamin B1).
