Characteristics Dried shiitake mushrooms with a rich aroma and fleshy texture. Ideal for stir fries but also for classic recipes such as risotto, perfectly replacing porcini. Try them as a garnish for grilled fish and meat dishes. Soak the mushrooms in very hot water for 30 minutes. Cut off the stems and cut them in half or into strips.
