The final blend of the base wine contains 47% Pinot Noir, 36% Chardonnay and 17% Meunier and matures for about 7 years in the bottle. Its color is light gold and its bubbles are fine and persistent. The aromas of flowers, ripe and dried citrus fruits, nuts, bread, tsoureki and honey create an unreal bouquet. Its taste is elegant and dry-fruited, with crisp acidity and a very long finish. It is a wine that could develop even more over time. It goes well with mature cheeses, fine cold cuts, shellfish, lobster and crayfish dishes, raw fish preparations, meats breaded with nuts, pate and smoked dishes.
